One Skillet Low Carb Chicken & Brussels Sprouts

Busy evenings call for fast meals and easy cleanup. Am I right, or amiright?? And there’s nothing easier than a one skillet meal!

We’re a pretty big fan of Brussels sprouts over here. They’re easy, versatile, and pretty delicious. Smother them in a creamy Parmesan sauce and they’re even better!

I like to save my bacon grease for later use. If you’re keto, I’m sure you do the same! I greatly dislike recipes that call for bacon grease and bacon crumbles, because…uhhh, bacon. Who can save the bacon to crumble for later?! I like to keep a store-bought bag of bacon crumbles on hands for times like this.

Heat your bacon grease on medium heat in an iron skillet. If you do not have bacon grease, butter will also work. Sauté your washed and sliced Brussels sprouts and your diced chicken in the grease, with some garlic and onion powder, and salt and pepper to taste.

You want to get a nice crisp on your chicken and your Brussels sprouts.

When your chicken and veggies are fully cooked, add some heavy cream and shaved Parmesan cheese and gently stir. It will thicken to a decadent, cheesy sauce. Serve hot and enjoy!

Ingredients
  

  • 1/4 cup bacon grease or butter
  • 2-4 chicken breasts, diced
  • 1-2 cups brussels sprouts
  • 1 tbsp garlic powder
  • 1/2 tbsp onion powder
  • 3/4 cup heavy cream
  • 3/4 cup shredded parmesan
  • salt and pepper to taste

Method
 

  1. Heat your butter or grease in an iron skillet on medium heat.
  2. Add your diced chicken, brussels sprouts, seasonings, and stir.
  3. Cook chicken through and brussels sprouts until tender and charred.
  4. Add heavy cream, lower heat.
  5. Stir in shredded parmesan cheese. Serve and enjoy!

Notes

You can sub any frying agent you have on hand.  You can also adjust the seasonings to your liking, and double the sauce ingredients if you’d like more!
